Sweet or Savory Crepes

Versitile - a great sweet breakfast or as a snack on the go

Rich in protein, this wholefood, freshly prepared bread alternative offers a steady energy release and keeps you satisfied. Homemade crepes are convenient not only for their versatility in fillings but also for their ease of packing and travel, and they help save money.


Sweet or Savory Crepes

Makes: 5 crepes

Time: 20 mins


Ingredients


  • 4 Tbsp oat flakes (40gr) | 147kcal/ 4.8gr protein/ 3.6gr fibre/ 22.4gr carbs/3.4gr fat

  • 2 Tbsp wholemeal spelt flour (40gr) | 135.6kcal/ 4.4gr protein/ 4.4gr fibre/ 24.8gr carbs/1.16gr fat

  • 2 Tbsp gram flour (40gr) | 138kcal/ 9.2gr protein/ 10gr fibre/ 21.8gr carbs/ 0.96gr fat

  • 300 ml water

  • 1/4 tsp baking powder


    Total nutritional values (5 crepes):

    420.6kcal/ 18.4gr protein/ 18gr fibre/ 69gr carbs/ 5.52gr fat.


    Nutritional values per crepe:

    84.12kcal/ 3.68gr protein/ 3.6gr fibre/ 13.8gr carbs/ 1.1gr fat


Directions

  1. In a blender, mix all of the ingredients and blitz into a creamy liquid.

  2. Divide the mix into 5 equal portions.

  3. Heat a lightly oiled crepe pan to medium temperature, and pour one measure into the centre, and spread evenly into a disk (tilt and swirl).

  4. Cook for 1 to 2 munites or until the bottom is slightly brown and the edges begin to lift.

  5. Flip the crepe and cook for another minute or until slightly brown on the other side.

  6. Transfer the cooked crepe to a plate and fill as you like.


    Alternative suggestions:

    To achieve a more savory taste, include paprika, rosemary, or any other herbs and spices you prefer.

    For a sweet variation add agave syrup or cacao, vanilla, cinnamon, etc.

Great recipe for using oats. A proper non stick pan is highly recommend ;)
